Method

  1. Rinse and soak

Rinse the rice in several changes of water until it runs clear. Soak for 15 minutes, then drain well.

  2. Temper the spices

Heat the ghee in a heavy-bottomed pot over medium heat. Add the cumin seeds, bay leaf, cloves and cardamom. Cook for 30 seconds until the cumin sizzles and smells fragrant.

  3. Add the rice

Add the drained rice and gently fry for 1 minute, stirring carefully so the grains do not break.

  4. Cook

Pour in the water and add the salt. Bring to a boil, then reduce the heat to low, cover with a tight lid, and cook for 12 to 14 minutes until the water is absorbed.

  5. Rest and fluff

Turn off the heat and rest, covered, for 5 minutes. Fluff with a fork, add a squeeze of lemon if you like, and serve.

Cook’s notes

  • The soaking time (15 minutes) is not included in the 25 minutes.
  • Do not stir the rice once the lid is on.
  • Serve with dal makhani, rajma or any curry.
